So - yould have to know exactly what you played right down to every little hit or the drum / cymbal takes wouldnt match up

Why? On the 2nd take you’d only be playing the cymbals, you wouldn’t play the whole fill or the drums would be recorded by the cymbal mics.

Depends how you do it. When my old band did some cymbal overdubs the drummer just sat listening to the original drum track on the headphones and only played the cymbals.
