No, any old rat will do. Muchin the same way that Madhur Jaffry always says “..add two large shallots - but you can use onions”, if you can’t get hold of the common-or-garden big black rat, a matted brown one will do for these purposes.

Now, remember to add the garlic early on, to let the flavours infuse, and don’t be afraid to use a large pinch of salt - you won’t taste it so much once the rat is fully cooked, but it will help to draw the juices out.

I find, much like mushrooms, wild rats have more flavour than the battery-bred ones., but I do understand how it can be confusing for the consumer, with these things not being properly labelled in the sewers as organic.
