Any suggestions for a healthy, quick to prepare supper (i.e. something smaller than a dinner)? Ideally something that you’d want to eat after watching Watchmen at the flicks on a Sunday night. Not looking for vegetarian ideas per se but not against veggy ideas either.

Nice salad? Rocket, cherry tomatoes, red onion, olive oil, hard-boiled egg, bit of parmesan over the top. Tuna or anchovies or bit of chargrilled chicken breast. Nice crusty bread, big lump of crumbly cheese, bottle of wine…

lasagne? The normal, meat version. Also, I know you said no veggy but another option is vegetarian lasagne which is GAWJUSSS and even as a meat eater i actually prefer vegetarian lasagne.
Lasagne is good because you can prepare it prior to the movie and just stick it in the oven for 20 minutes when needed. I think it’s 20 minutes anyway, just check a recipe ;)

You could do pasta with pesto, slice up a few vegetables and cook them in.

Maybe spaghetti bolognase?

Stir fry - ?

How about preparing some baked potatoes, I’m pretty sure you can leave them in the oven whilst you’re at the movies and when you come back get them out, stick some butter in and have a range of bowled goodies you can eat with them such as tuna mayonnaise, beans, cheese, etc. You can also microwave potatoes to bake them but i’ve never tried this so you’d have to look it up.

What kind of people is the meal for? If it’s for a lady friend I’d go with the lasagne or the pasta + pesto.

I quite like the chicken salad, crusty bread and wine and cheese option - thanks Dennis.

It is for me and my lady friend.

Re veggy, what I meant was I’m not a veggy, so meat dishes are fine, but I won’t disregard a suggestion just because its veggy. :-)

You could do something like make some dark chocolate truffles.. they’ll take you a couple of hours to make but make them a day or so before and you can just whip them out of storage and have them on a plate or in a nicely displayed box, whatever. They’re gorgeous and fairly easy aslong as you do a bit of research, use the right ingredients and follow the recipe.

If you want some recipes for them ask and i’ll dig up the resources i used for them. Went down a treat with the girlfriend :-D And her mother.

Tortilla, fold it up into half then half again, put it in the toaster on a very low setting, take it out when its gone a bit golden, squirt some mayanoase in it, get some lettuce and put that on top of the mayonaise, then get a strip of chicken you have already heated and throw that on top of the salad, pull the flaps of the tortila from the left and right to cover thwe dollop of food, then roll up from the bottom.

Thats how to make a wrap :) (learnt from mcdonalds)

What about a bruschetta? Its a bit like posh toastie.

Slice a thick wedge of bread ( baguette, ciabatta, farmhouse).
Spread with pesto or tapanade
Top with grated cheese
Stick it under the grill.

To posh it up even more you can use fresh basil leaves, olives, anchovies or bacon bits.

Serve with a few salad leaves and fresh tomatoes. Quick and healthy :)

Omelette and chips

Get about 8 or 9 eggs, beat them together with salt, pepper and chilli powder, melt half a pack of butter in a wok and pour in the egg/chilli mixture then sort of prod it with a wooden spoon til it looks a bit like a pancake - bung some grated cheese/bacon/chilli con carne/ lamb tikka on top, fold in half and serve with oven chips or better still, put a couple of potato waffles in the toaster.

Garnish liberally with salt, pepper and chilli sauce and you have a perfect post-pictures quickie.

Cheese toastie with hot peppers.

Heat a sandwich toaster. Margarine two sides of two pieces of white bread. Cut a good few slices of a good strong tasting cheese and chop up a couple of pickled hot chillis. Place slice of bread facing margarined side downwards in toaster and place cheese and peppers in centre of bread, cover with other slice of bread (margarined side facing upwards). Close sandwich toaster. Wait 7 minutes or until bread is a bit browned. Eat.

Go out the night before on the lash - have say 8 to 10 pints.

Stop off on the way home at the local kebab shop or curry house - make a purchase.

Eat what you can on the night (with 8 to 10 pints in you, you’ll be feeling pretty hungry but chances are you wont eat much) - then simply save and reheat the remains the following night.

Remove from curry/kebab house packaging for extra presentation points, and if you really care - garnish with something you’ve found in the fridge.

I think that’s more likely to succeed than anything that’s got margarine in it. What’s wrong with you people? Use butter for God’s sake!!

Mushroom Rarebit - really quick and tasty…
Ingredients
300g nice strong cheddar, 1 egg, tabasco, mustard, bread (I used walnut, but any nice brown bread does the trick), mushrooms, garlic, butter and lemon juice

Method
1. Preheat the grill to its highest setting.
2. Mix the cheese, egg, Tabasco and mustard together in a bowl and season, to taste, with salt and freshly ground black pepper.
3. Divide the cheese mix equally among the slices of toast and spread across evenly.
4. Place onto a baking tray and cook under the grill until the cheese bubbles and browns.
5. Meanwhile, melt the butter in a frying pan over a medium heat. Add the mushrooms and fry for 2-3 minutes.
6. Add the garlic and lemon juice and cook for a further minute.
7. To serve, place a piece of rarebit toast onto each plate and top with the fried wild mushrooms.

Nice bottle of wine and some thorntons choccies - works for me!
