OK here goes (recipe adapted from the Leon cookbook):
You will need:
3 large onions, 3cloves of garlic, tsp paprika, 4 cloves, 1 blade of mace, 1.5 tsp celery salt, 5 tbs sunflower oil, 1.6kg chopped tomatoes (bout 4 cans), 5 tbs fructose (NOT sugar, tastes too sweet), 200ml apple juice, 175ml red wine vinegar, 3 dried chipotle or just chilli to your taste (optional).

Method:
1. Onion & garlic & spices fry on very low heat (sweat) for 15-20 mins.
2. Add tomatoes, fructose, applejuice, about 150ml of the vinegar and season with salt and pepper. Cook uncovered on lowest heat you can for a couple of hours.
3. Chop chipotle if using and add.
4. Cook uncovered on very low heat untill reduced to your desired thickness.
5. Add last 25ml of vinegar.
6. Cool.
7. Blend, bring back to the boil and bottle (steralise bottles by pouring boiling water in, then empty and put in oven on low heat until dry).
8. Keep in fridge.

Important: This needs to mature for at least 2 weeks to allow flavour to develop.
This makes quite a lot but is good to give to friends etc.
