Hating my job right now…sitting with bugger all to do because most of my work has been moved offshore and have been under redundancy threat since Oct!!! ARGGGGGGGHHHHH!!! >:-<

For reliability you can’t beat a Toshiba. Good one is a Toshiba L300 - 250gb HD, 4gb memory, dual core, and all the usual wireless guff. Value for money would probably be Acer T3400. Think its about £400.

Mushroom Rarebit - really quick and tasty…
Ingredients
300g nice strong cheddar, 1 egg, tabasco, mustard, bread (I used walnut, but any nice brown bread does the trick), mushrooms, garlic, butter and lemon juice

Method
1. Preheat the grill to its highest setting.
2. Mix the cheese, egg, Tabasco and mustard together in a bowl and season, to taste, with salt and freshly ground black pepper.
3. Divide the cheese mix equally among the slices of toast and spread across evenly.
4. Place onto a baking tray and cook under the grill until the cheese bubbles and browns.
5. Meanwhile, melt the butter in a frying pan over a medium heat. Add the mushrooms and fry for 2-3 minutes.
6. Add the garlic and lemon juice and cook for a further minute.
7. To serve, place a piece of rarebit toast onto each plate and top with the fried wild mushrooms.

Nice bottle of wine and some thorntons choccies - works for me!
